- 90 g (1/2 cup) oat flour, plus extra for dusting
- 3 tbsp olive oil
Instructions
- Combine Ingredients: Add the mashed sweet potato, mashed carrot, finely chopped rosemary, garlic granules, egg, Greek yogurt, oat flour, and olive oil to a large mixing bowl. Stir well until all ingredients are fully combined into a smooth, cohesive mixture.
- Prepare Mixture: Sprinkle some extra oat flour onto a plate to prevent sticking. Using a tablespoon, portion out the mixture onto the floured plate. This step helps to avoid the bites sticking to surfaces during cooking.
- Cook the Bites: Place the prepared bites into your air fryer basket, ensuring enough space between them for air circulation. Cook at 180ºC (356ºF) for 12 minutes until golden and cooked through. Alternatively, arrange the bites on a parchment-lined baking tray and bake in a preheated oven at 180ºC (356ºF) for 20-25 minutes until golden and cooked through.
- Serve: Once cooked, serve the sweet potato and carrot bites warm. Add a dipping sauce of your choice and sprinkle with fresh parsley for added flavor and freshness.
