Ingredients
Scale
Pastry
- 1 sheet of puff pastry, thawed
Almond Filling
- 1/2 cup almond paste, crumbled
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, softened
- 1 egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon almond extract
- 1/4 cup almond flour
Topping
- 1/4 cup sliced almonds
- Powdered sugar for dusting (optional)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 375°F (190°C) and grease or line a 12-cup muffin tin to prevent sticking.
- Make Almond Filling: In a medium bowl, combine crumbled almond paste, granulated sugar, and softened unsalted butter. Mix until smooth and creamy. Then add the egg, vanilla extract, and almond extract, mixing thoroughly. Stir in the almond flour to complete the filling.
- Prepare Puff Pastry: Roll out the thawed puff pastry on a floured surface to smooth it out and then cut it into 12 equal squares.
- Assemble Muffins: Place each puff pastry square into the muffin tin cups, pressing down gently and pushing the pastry slightly up the sides to form a cup shape. Spoon about one tablespoon of the almond filling into each pastry cup, then fold over the corners slightly if desired for shape.
- Add Toppings: Sprinkle the tops with sliced almonds evenly to add crunch and enhance flavor.
- Bake: Bake in the preheated oven for 15 to 18 minutes until the pastry is golden brown and puffed.
- Cool and Serve: Allow the muffins to cool in the tin for a few minutes before transferring them to a wire rack. Dust with powdered sugar if desired before serving.
Notes
- Ensure the puff pastry is properly thawed but still cold for easy handling and optimal puff.
- The almond paste can be substituted with marzipan if almond paste is unavailable.
- Use fresh butter for best flavor and texture in the filling.
- These muffins can be prepared ahead and reheated for 5 minutes in the oven to refresh crispness.
- For a dairy-free variation, use vegan butter and egg replacer, adjusting baking time as needed.
