Description

This Bacon and Pimento Cheese Quiche is a savory, rich dish perfect for brunch or a cozy dinner. Featuring a flaky deep-dish pie crust filled with sharp cheddar cheese, smoky bacon, and sweet diced pimentos, all combined in a creamy egg custard, this quiche delivers bold flavors with a smooth texture. Baked to golden perfection, it’s ideal served warm and makes for a satisfying meal that’s both comforting and elegant.

Ingredients

Scale

Crust

  • 1 (9-inch) deep dish pie crust, unbaked

Filling

  • 2 cups thick shredded sharp cheddar cheese
  • 3/4 to 1 cup crumbled cooked bacon (or 1 (2.8-ounce) bag precooked real bacon pieces)
  • 1 (4-ounce) jar diced pimentos, well drained
  • 4 large eggs
  • 1 cup whole milk
  • 1/2 cup heavy cream
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat Oven: Preheat the oven to 375°F (190°C) and place a large rimmed baking sheet on the center rack to heat up along with the oven. This ensures the quiche cooks evenly and the crust crisps nicely.
  2. Assemble Filling: Sprinkle the shredded sharp cheddar cheese evenly into the bottom of the unbaked pie crust. Distribute the well-drained diced pimentos evenly over the cheese layer, then top with crumbled cooked bacon.
  3. Prepare Custard: In a medium bowl, whisk together the eggs, whole milk, heavy cream, salt, and black pepper until fully combined to create a smooth custard mixture. Pour this mixture carefully into the crust over the layered ingredients, making sure not to overfill.
  4. Bake the Quiche: Carefully place the filled pie crust onto the preheated baking sheet in the oven. Bake for 35 to 40 minutes or until the quiche is set—when the edges are firm and a knife inserted near the center comes out clean.
  5. Cool and Serve: Remove the quiche from the oven and allow it to cool for about 15 minutes to set further. Slice and serve warm for best flavor and texture enjoyment.

Notes

  • For a crispier crust bottom, placing the quiche on a hot baking sheet is essential to prevent sogginess.
  • You can substitute precooked bacon pieces if pressed for time.
  • The quiche can be made ahead and gently reheated in the oven before serving.
  • Adjust seasoning to taste, especially if your bacon is already salty.
  • Leftovers can be stored in the refrigerator for up to 3 days and reheated.
