Ingredients
Scale
Avocado and Eggs
- 2 ripe avocados, halved and pitted
- 4 medium eggs
Turkey and Seasonings
- 4 slices deli-style turkey breast (low sodium, if preferred)
- Salt and black pepper to taste
- ¼ teaspoon paprika (optional)
- Chopped fresh parsley or chives for garnish
For Baking
- Olive oil spray or a touch of oil (for greasing baking dish)
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) and lightly grease a small baking dish with olive oil spray or a small amount of oil to prevent sticking.
- Prepare Avocados: Scoop out a small amount of avocado flesh from each half to create enough space for the egg to fit comfortably.
- Line with Turkey: Take one folded slice of deli-style turkey breast and press it firmly into the cavity of each avocado half, creating a lining inside the hollow space.
- Add Eggs: Carefully crack one egg into each turkey-lined avocado half. If needed, allow some excess egg white to spill out to avoid overflow during baking.
- Season: Sprinkle salt, black pepper, and paprika (if using) evenly over each egg-filled avocado half to enhance the flavor.
- Bake: Place the prepared baking dish in the preheated oven and bake for 15–18 minutes, or until the egg whites are fully set and the yolks reach your preferred level of doneness.
- Cool and Garnish: Remove the dish from the oven and let the baked avocado eggs cool slightly. Garnish with freshly chopped parsley or chives before serving.
Notes
- Use smaller eggs to better fit inside the avocado halves, or remove some egg white before filling to prevent overflow.
- For extra flavor, consider adding shredded cheese or a drizzle of hot sauce on top before baking.
