Instructions
- Preheat and Prepare Pan: Preheat the oven to 350°F (175°C). Lightly grease a 24-cup mini muffin pan with non-stick cooking spray to prevent sticking.
- Combine Dry Ingredients: In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly mixed.
- Mix Wet Ingredients: In a separate small bowl, whisk together the melted unsalted butter, egg, vanilla extract, and blueberry Greek yogurt until smooth. Pour this mixture into the bowl with the dry ingredients and stir until just combined. Carefully fold in the fresh or frozen blueberries to preserve their shape.
- Fill Muffin Cups and Bake: Scoop the batter evenly into the prepared mini muffin cups, filling almost to the top. Bake in the preheated oven for about 15 minutes or until the tops start to turn light brown and a toothpick inserted comes out clean.
- Prepare for Broiling: Remove the baked fritters from the oven and turn the broiler on high. Line a baking sheet with parchment paper and transfer the fritters onto it carefully.
