Description

This wholesome Baked Oatmeal recipe is a comforting and nutritious breakfast option, featuring a blend of oats, warm spices, fresh berries, and natural sweetness from maple syrup. Baked to perfection for a soft yet set texture, it’s perfect served warm, chilled, or at room temperature, making it an excellent make-ahead meal.

Ingredients

Scale

Wet Ingredients

  • 1 cup milk
  • 1 large egg
  • 1 large egg yolk
  • 1/2 cup maple syrup
  • 1-1/2 teaspoons vanilla extract
  • 1/3 cup melted coconut oil (or melted butter)

Dry Ingredients

  • 2 cups old-fashioned oats
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 3/4 teaspoon salt

Fruit & Toppings

  • 1-1/2 cups fresh berries (blueberries or other berries cut to size)
  • 1-1/2 tablespoons turbinado sugar (optional, for sprinkling on top)

Instructions

  1. Prepare: Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper or lightly grease it with cooking spray to prevent sticking.
  2. Make Batter: In a large bowl, whisk together the milk, egg, egg yolk, maple syrup, vanilla extract, and melted coconut oil until the mixture is smooth. Then, stir in the oats, baking powder, cinnamon, nutmeg, and salt with a wooden spoon until everything is thoroughly combined.
  3. Add Berries: If using all blueberries, gently fold them into the batter. For other types of berries, cut them down to roughly the size of blueberries before gently incorporating. Transfer the batter to the prepared pan, smoothing the top with a spatula. Optionally, sprinkle turbinado sugar on top for extra crunch.
  4. Bake: Immediately place the pan in the oven and bake for 28 to 35 minutes, until the oatmeal is set and the top is lightly golden. Baking time affects texture: less time yields softer oatmeal, while longer baking firms it up.
  5. Cool and Serve: Allow the baked oatmeal to cool slightly before cutting into squares. It is best enjoyed warm but can also be served chilled or at room temperature. For extra flavor, drizzle with milk, coffee creamer, or a bit more maple syrup, and garnish with additional fresh berries if desired.

Notes

  • Milk can be substituted with any dairy or plant-based milk, such as almond or oat milk.
  • Maple syrup adds natural sweetness, but honey or agave syrup can be used as alternatives.
  • Old-fashioned oats are preferred for texture; quick oats tend to make the bake mushier.
  • Fresh berries add natural sweetness and texture; frozen can be used but may affect baking time and moisture.
  • Serving suggestions include adding a splash of milk or coffee creamer and an extra drizzle of maple syrup for richness.
