Description

These Banana Bread Energy Bites are wholesome, no-bake snacks combining creamy peanut butter, ripe bananas, oats, and chocolate chips. Perfect for a quick energy boost, they are easy to prepare, naturally sweetened with honey, and packed with protein and fiber.

Ingredients

Scale

Wet Ingredients

  • 1 cup natural creamy peanut butter
  • ¼ cup mashed ripe banana
  • ½ cup honey
  • 2 teaspoons vanilla extract

Dry Ingredients

  • 1 teaspoon cinnamon
  • ½ cup vanilla protein powder
  • 2 cups rolled oats
  • 1 ¼ teaspoons salt
  • ½ cup mini chocolate chips

Instructions

  1. Combine Ingredients: Add all of the ingredients to a mixing bowl, then use a rubber spatula to mix thoroughly until a thick, sticky batter forms.
  2. Prepare for Shaping: Line a baking sheet with wax paper. Use a mini cookie scoop to drop small balls of batter evenly onto the sheet.
  3. Shape the Bites: Using your hands, gently roll each ball to smooth out the edges and form uniform rounds.
  4. Chill to Set: Place the baking sheet with the energy bites into the refrigerator and chill for 1 hour, or until the balls have hardened and hold their shape.
  5. Store Properly: Transfer the chilled energy bites to an airtight container. Store them in the refrigerator for up to one week or freeze for longer storage.

Notes

  • Use natural peanut butter without added sugar or oils for best flavor and texture.
  • Adjust salt quantity based on your preference or the saltiness of your peanut butter.
  • Ripe bananas should be soft with brown spots for optimal sweetness and moisture.
  • If you want to make it vegan, substitute honey with maple syrup or agave nectar.
  • Mini chocolate chips can be omitted or replaced with nuts or dried fruits as desired.
