Salmon and BBQ Sauce
- 4 salmon fillets (6 oz each)

Mango Avocado Salsa
- 1 ripe mango, peeled and diced
- 1 ripe avocado, diced
- 1/4 cup red onion, finely chopped
- 1 small jalapeño, seeded and minced
- 2 tablespoons fresh cilantro, chopped
- Juice of 1 lime
- Pinch of salt
Instructions
- Prepare the Salmon: Preheat your grill or oven to 400°F (200°C). Pat the salmon fillets dry with paper towels, then season them lightly with salt and pepper. Brush each fillet generously with BBQ sauce and set aside to marinate briefly.
- Make the Mango Avocado Salsa: In a medium bowl, combine the diced mango, diced avocado, finely chopped red onion, minced jalapeño, chopped cilantro, lime juice, and a pinch of salt. Gently toss all ingredients together to mix well. Refrigerate the salsa until ready to serve, adding avocado last to prevent browning if preparing in advance.
- Cook the Salmon: If grilling, place salmon skin-side down on the hot grill. Cook for 4 to 5 minutes, then carefully flip the fillets and cook an additional 3 to 4 minutes.
