Salmon and BBQ Sauce

  • 4 salmon fillets (6 oz each)

Mango Avocado Salsa

  • 1 ripe mango, peeled and diced
  • 1 ripe avocado, diced
  • 1/4 cup red onion, finely chopped
  • 1 small jalapeño, seeded and minced
  • 2 tablespoons fresh cilantro, chopped
  • Juice of 1 lime
  • Pinch of salt


Instructions

  1. Prepare the Salmon: Preheat your grill or oven to 400°F (200°C). Pat the salmon fillets dry with paper towels, then season them lightly with salt and pepper. Brush each fillet generously with BBQ sauce and set aside to marinate briefly.
  2. Make the Mango Avocado Salsa: In a medium bowl, combine the diced mango, diced avocado, finely chopped red onion, minced jalapeño, chopped cilantro, lime juice, and a pinch of salt. Gently toss all ingredients together to mix well. Refrigerate the salsa until ready to serve, adding avocado last to prevent browning if preparing in advance.
  3. Cook the Salmon: If grilling, place salmon skin-side down on the hot grill. Cook for 4 to 5 minutes, then carefully flip the fillets and cook an additional 3 to 4 minutes. Brush more BBQ sauce onto the fish as needed during grilling.
