Beef Mixture

Instructions

  1. Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 9×13 inch baking dish to prevent sticking.
  2. Sauté Aromatics: In a large skillet over medium heat, heat olive oil and sauté the diced onion for 3 to 4 minutes until softened and translucent. Add the minced garlic and cook for another 30 seconds until fragrant.
  3. Cook Ground Beef: Add the ground beef to the skillet and cook until browned, breaking it apart with a spoon to crumble evenly. Drain any excess grease to keep the casserole lighter.
  4. Add Seasonings and Vegetables: Stir in the taco seasoning, salt, and black pepper. Mix in black beans, corn, and 1 cup of the enchilada sauce. Let the mixture simmer gently for 3 to 5 minutes to meld flavors and heat through.
  5. Layer the Casserole: Spread 1/2 cup of enchilada sauce on the bottom of the prepared baking dish. Layer half of the tortilla pieces over the sauce, followed by half of the beef mixture and 1 cup of shredded cheese. Repeat the layers with the remaining tortillas, beef mixture, and enchilada sauce. Top with the remaining cheese.
