Description

A quick and delicious recipe for Breakfast Tacos featuring fluffy scrambled eggs, melted cheese, savory sausage or bacon, fresh veggies, and creamy avocado, all wrapped in warm tortillas. Perfect for a satisfying and flavorful morning meal in just 15 minutes.

Ingredients

Scale

Egg Mixture

  • 4 large eggs
  • Salt and pepper, to taste
  • 1 tablespoon butter or oil

Fillings & Toppings

  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or your choice)
  • 4 small flour or corn tortillas
  • 1/2 cup cooked breakfast sausage or bacon, crumbled
  • 1/4 cup diced tomatoes
  • 1/4 cup diced onion
  • 1/4 cup chopped cilantro
  • 1/2 avocado, sliced
  • Salsa, to taste
  • Hot sauce, to taste

Instructions

  1. Prepare the Eggs: In a bowl, whisk together the 4 large eggs with a pinch of salt and pepper until well combined and slightly frothy for fluffiness.
  2. Cook the Eggs: Heat 1 tablespoon of butter or oil in a skillet over medium heat. Pour in the eggs and cook gently, stirring occasionally, until the eggs are scrambled and just set but still moist. Remove the pan from heat to prevent overcooking.
  3. Warm the Tortillas: Warm the 4 small flour or corn tortillas in a separate skillet over low heat or microwave them for about 15-20 seconds until soft and pliable.
  4. Assemble Tacos: Evenly divide the scrambled eggs among the warmed tortillas. Sprinkle each with about 2 tablespoons of shredded cheese. Top with crumbled sausage or bacon, diced tomatoes, diced onion, chopped cilantro, and sliced avocado according to your preference.
  5. Add Condiments & Serve: Finish with salsa and hot sauce to taste. Serve the breakfast tacos immediately while warm, with extra salsa or hot sauce on the side if desired.

Notes

  • You can substitute sausage or bacon with vegetarian alternatives for a meatless version.
  • To make the tacos dairy-free, omit the cheese or use a vegan cheese substitute.
  • Warm the tortillas carefully to avoid drying them out – wrapping them in a damp paper towel during microwaving helps retain moisture.
  • Feel free to customize toppings with extras like jalapeños, sour cream, or black beans for added flavor and texture.
  • If using corn tortillas, look for fresh, soft ones to prevent cracking during wrapping.
