Ingredients
Scale
Buffalo Chicken
- 1 lb cooked chicken breast, shredded
- 1/4 cup buffalo sauce (store-bought or homemade)
- 1 tablespoon ranch dressing (optional, for creaminess)
Sandwich
- 8 slices of bread (white, whole wheat, or sourdough)
- 4 tablespoons butter (for spreading on bread)
- 1 tablespoon butter (for grilling the sandwich)
- 1 1/2 cups shredded sharp cheddar cheese (or a blend of cheddar and mozzarella)
- 1/2 cup crumbled blue cheese (optional for added flavor)
- 1/4 cup chopped green onions (optional, for garnish)
Instructions
- Prepare the Buffalo Chicken: In a bowl, combine the shredded cooked chicken with buffalo sauce and ranch dressing if using. Stir thoroughly until the chicken is evenly coated with the sauce mixture. Set this aside to let the flavors meld.
- Heat the Skillet: Place a nonstick skillet or griddle over medium heat and allow it to warm up fully before assembling the sandwiches.
- Butter the Bread: Spread butter evenly on one side of each slice of bread. This buttered side will help achieve a crispy, golden crust when grilled.
- Assemble the Sandwich Base: Place one slice of bread butter-side-down on the hot skillet. Immediately layer a generous amount of shredded sharp cheddar cheese, and blue cheese if using, on top of the bread.
- Add Buffalo Chicken: Spoon a good layer of the buffalo chicken mixture evenly over the cheese layer on the bread.
- Top the Sandwich: Place the second slice of bread on top with the buttered side facing up, completing the sandwich structure.
- Grill the Sandwich: Cook for about 3 to 4 minutes per side, pressing gently with a spatula. Flip carefully to ensure even browning and full melting of the cheese inside. The bread should be golden brown and crispy while the cheese melts thoroughly.
- Serve: Remove from the skillet, slice the sandwich in half, and garnish with chopped green onions if desired. Serve immediately while hot and melty.
Notes
- You can substitute ranch dressing with blue cheese dressing for a different flavor profile.
- Adjust the amount of buffalo sauce depending on your heat preference.
- Use your favorite bread – sourdough adds a nice tangy crunch.
- For a crispier sandwich, add an extra tablespoon of butter before grilling.
- Leftover grilled sandwiches can be reheated in a skillet with a little butter for best texture.
