Description

A healthy and flavorful cabbage fat-burning soup packed with fresh vegetables and herbs. This low-calorie, gluten-free, and vegan soup is perfect for detoxing and weight management while providing essential nutrients and fiber.

Ingredients

Scale

Vegetables

  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 3 carrots, peeled and sliced
  • 3 celery stalks, sliced
  • 1 green bell pepper, chopped
  • 1/2 head green cabbage, shredded
  • 1 can (14.5 oz) diced tomatoes with juice

Liquids

  • 1 tablespoon olive oil
  • 6 cups low-sodium vegetable or chicken broth

Spices & Herbs

  • 1 teaspoon dried basil
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • Optional: a squeeze of lemon juice
  • Optional: fresh parsley for garnish

Instructions

  1. Sauté aromatics: Heat olive oil in a large pot over medium heat. Add the chopped onion and minced garlic, sautéing for 2–3 minutes until softened and fragrant.
  2. Add vegetables: Stir in the sliced carrots, celery, and chopped green bell pepper. Cook for another 5 minutes, allowing the vegetables to begin softening and meld flavors.
  3. Add main ingredients and seasonings: Add the shredded cabbage, diced tomatoes with their juice, and the broth to the pot. Stir in dried basil, oregano, paprika, and season with salt and pepper to taste.
  4. Simmer the soup: Bring the soup to a boil, then reduce the heat and simmer uncovered for 25–30 minutes, or until all the vegetables are tender and flavors meld together.
  5. Finish and serve: Adjust seasonings as needed. Serve the soup hot with an optional squeeze of lemon juice and a garnish of fresh parsley for added brightness and flavor.
