Description

This simple and flavorful Cabbage Steaks recipe features thick slices of green cabbage seasoned with garlic powder, salt, and black pepper, then roasted to perfection with olive oil. The roasting process brings out the natural sweetness and crisp edges of the cabbage, making it a delicious and healthy side dish for any meal.

Ingredients

Scale

Ingredients

  • 1 head of green cabbage
  • 1 teaspoon (3 g) kosher salt
  • ½ teaspoon (2 g) garlic powder
  • ¼ teaspoon black pepper
  • ¼ cup (60 ml) extra-virgin olive oil

Instructions

  1. Heat the Oven: Adjust your oven rack to the middle position and preheat the oven to 400ºF (204ºC). Line a large sheet pan with olive oil or lightly grease it to prevent sticking.
  2. Slice the Cabbage: Use a large knife to trim the bottom of the cabbage core to create a stable base. Remove any loose outer leaves, then cut the cabbage lengthwise into 1-inch thick steaks. Lay them in a single layer on the prepared sheet pan to ensure even roasting.
  3. Season the Cabbage: In a small bowl, combine the kosher salt, garlic powder, and black pepper. Brush both the surface and sides of each cabbage steak generously with olive oil, then sprinkle the seasoning mixture evenly on both sides.
  4. Roast: Place the sheet pan in the oven and roast the cabbage steaks for 35 to 40 minutes, turning the pan halfway through cooking. Roast until the edges are deeply golden brown and the centers are tender. Optionally, brush more olive oil on the steaks and season with additional salt and pepper before serving.

Notes

  • For best results, use a sharp knife to slice the cabbage evenly into thick steaks.
  • If you prefer, you can add other seasonings such as smoked paprika or chili flakes for extra flavor.
  • Leftover roasted cabbage steaks can be reheated or added to salads and wraps.
  • Use a sturdy baking sheet to avoid bending or tipping while roasting.
  • Roasting time may vary slightly depending on your oven and the size of the cabbage steaks.
