Instructions

- Alternate Cooking Method (Instant Pot): Place the cauliflower florets on the steamer insert of an Instant Pot and add 1/2 cup of water to the bottom. Set to high pressure and steam the cauliflower for 2 minutes, then carefully release the pressure.
- Drain and Cool: After cooking, drain the cauliflower thoroughly and let it cool slightly. Squeeze out excess water by wrapping the cauliflower in a clean kitchen towel and gently pressing. For quicker water removal, use tongs or rubber gloves to squeeze while still warm, avoiding bare hands.
- Mix Ingredients: For a chunkier texture, combine the cauliflower florets with grated cheddar cheese, sour cream, softened butter, salt, and black pepper by hand until well mixed.
- Blend for Smoothness: For a creamier, smoother mash, transfer the drained cauliflower and all ingredients except the chives into a food processor. Puree for about one minute until smooth and creamy.
