Ingredients
Scale
Main Ingredients
- 1 (32 oz) bag of frozen hashbrowns
- 1 kielbasa sausage, diced (about 12 oz)
- 1 small onion, diced
- 2 cups shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup milk
- 1 (10 oz) can cream of mushroom or chicken soup
Optional Seasonings
- Salt, to taste
- Black pepper, to taste
- Minced garlic, 1 teaspoon
- Onion powder, 1/2 teaspoon
Instructions
- Prepare the Ingredients: Dice the kielbasa sausage and small onion into bite-sized pieces. Measure out the shredded cheddar cheese, sour cream, milk, and cream of mushroom or chicken soup.
- Mix the Casserole: In a large mixing bowl, combine the frozen hashbrowns, diced kielbasa, and diced onion. Add the shredded cheddar cheese, sour cream, milk, and cream of mushroom or chicken soup. Stir in optional seasonings such as salt, pepper, minced garlic, and onion powder to enhance the flavor. Mix thoroughly until all ingredients are well incorporated.
- Transfer to Slow Cooker: Lightly grease the inside of your slow cooker or crockpot. Pour the entire mixture into the slow cooker, spreading evenly.
- Cook the Casserole: Cover the slow cooker and cook on LOW for 6 hours, or on HIGH for 3-4 hours. Cooking on low heat allows the flavors to meld and the cheese to melt gently, resulting in a creamy texture. The casserole is ready when the hashbrowns are tender and the top is bubbly and slightly golden.
- Serve: Once cooked, turn off the slow cooker and let the casserole rest for a few minutes before serving. Scoop portions onto plates and enjoy this cheesy, flavorful casserole warm.
Notes
- For a thicker casserole, you can add an extra 1/2 cup of shredded cheese before serving.
- Substitute kielbasa with smoked sausage or cooked bacon for variation.
- This casserole can be made ahead and refrigerated overnight before slow cooking to deepen flavors.
- Adding chopped bell peppers or mushrooms can add extra vegetables and texture.
- Use low-sodium soup and reduced-fat cheese to decrease sodium and fat content.
