Ingredients
Scale
Potatoes and Seasoning
- 1 ½ pounds baby potatoes, halved
- 2 tablespoons olive oil
- 1 tablespoon dry ranch seasoning mix
- 1 teaspoon garlic powder
- Salt and black pepper to taste
Sausage and Toppings
- 14 ounces smoked sausage, sliced into ½-inch rounds
- 1 ½ cups shredded cheddar cheese
- 2 green onions, sliced
- Chopped parsley for garnish (optional)
Instructions
- Preheat Oven and Prepare Potatoes: Preheat your oven to 400°F (200°C). In a large bowl, toss the halved baby potatoes with olive oil, dry ranch seasoning mix, garlic powder, salt, and black pepper until evenly coated.
- Roast Potatoes Initially: Spread the seasoned potatoes in a single layer on a large baking sheet lined with parchment paper or foil. Roast in the preheated oven for 20 minutes to begin cooking and browning the potatoes.
- Add Sausage and Continue Roasting: Remove the baking sheet from the oven and stir the potatoes to turn them. Add the sliced smoked sausage to the baking sheet, mixing it gently with the potatoes. Return the pan to the oven and roast for an additional 20 minutes until the potatoes are tender and golden and the sausage is slightly crispy.
- Add Cheese and Finish Baking: Take the baking sheet out of the oven once more and sprinkle the shredded cheddar cheese evenly over the top of the potatoes and sausage. Place the pan back into the oven for 5 minutes, or until the cheese melts fully and becomes bubbly.
- Garnish and Serve: Remove from oven and top with sliced green onions and optional chopped parsley for a fresh finish. Serve warm as a satisfying main dish or a delicious side.
Notes
- You can use red, yellow, or fingerling potatoes based on your preference or availability.
- For an extra layer of flavor, substitute cheddar cheese with a blend like Monterey Jack or pepper jack cheese.
- This dish works great as a hearty side or a complete main meal, suitable for casual family dinners or gatherings.
