Description

This Chipotle Shrimp Bowl is a flavorful and vibrant meal featuring marinated and skillet-cooked shrimp seasoned with smoky chipotle chili powder and spices. Served over rice with black beans, corn, fresh vegetables, and a zesty lime crema, this dish offers a perfect balance of smoky, tangy, and fresh flavors, ready in just 25 minutes.

Ingredients

Scale

For the Chipotle Shrimp:

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tbsp chipotle chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp cumin
  • 1 garlic clove, minced
  • Juice of 1 lime
  • Salt & pepper to taste

Main Ingredients:

  • 2 cups cooked white or brown rice (or cauliflower rice for low-carb)
  • 1/2 cup black beans, drained and rinsed
  • 1/2 cup corn kernels (fresh, canned, or frozen)
  • 1/2 cup cherry tomatoes, halved
  • 1/2 avocado, sliced
  • 2 tbsp chopped red onion
  • Fresh cilantro for garnish
  • Lime wedges for serving

Lime Crema:

  • 1/4 cup sour cream or Greek yogurt
  • 1 tbsp lime juice
  • 1 tsp lime zest
  • Pinch of salt

Instructions

  1. Marinate the shrimp: In a bowl, toss the peeled and deveined shrimp with olive oil, chipotle chili powder, smoked paprika, cumin, minced garlic, lime juice, salt, and pepper. Mix well to coat all shrimp thoroughly. Let the shrimp marinate for 15 to 20 minutes to absorb the flavors.
  2. Cook the shrimp: Heat a skillet over medium-high heat until hot. Add the marinated shrimp in a single layer and cook them for 2 to 3 minutes on each side until they turn opaque and develop a slight char. Remove the shrimp from the skillet and set aside.
  3. Prepare the lime crema: In a small bowl, combine sour cream or Greek yogurt with lime juice, lime zest, and a pinch of salt. Stir until the mixture is smooth and creamy. Adjust seasoning if needed.
  4. Assemble the bowls: Distribute the cooked rice evenly among four serving bowls. Top each bowl with black beans, corn kernels, halved cherry tomatoes, sliced avocado, chopped red onion, and the cooked chipotle shrimp.
  5. Finish and serve: Drizzle each bowl generously with the lime crema. Garnish with freshly chopped cilantro and serve with lime wedges on the side for extra zest. Enjoy immediately while warm.

Notes

  • You can substitute cauliflower rice for a low-carb option.
  • If you prefer less heat, reduce the chipotle chili powder amount.
  • Fresh lime juice is best for the marinade and crema for optimal flavor.
  • Use Greek yogurt instead of sour cream for a healthier version.
  • Feel free to add extra veggies like bell peppers or shredded lettuce for added crunch.
