Ingredients
Scale
Dry Ingredients
- 1 1/2 cups All-Purpose Flour
- 1 teaspoon Baking Powder
- 1/4 cup Granulated Sugar
- 1 teaspoon Ground Cinnamon
Wet Ingredients
- 6 tablespoons Unsalted Butter (melted)
- 1/2 cup Whole Milk
- 2 large Eggs
- 1 teaspoon Vanilla Extract
Finishing
- 1/4 cup Granulated Sugar
- 1 teaspoon Ground Cinnamon
Instructions
- Preheat Oven and Prepare Muffin Tin. Preheat your oven to 375°F (190°C) and grease a muffin tin thoroughly to prevent sticking.
- Mix Dry Ingredients. In a large bowl, whisk together the all-purpose flour, baking powder, granulated sugar, and ground cinnamon until evenly combined.
- Combine Wet Ingredients. In another bowl, melt the unsalted butter and then mix it with the whole milk, eggs, and vanilla extract until fully incorporated.
- Combine Wet and Dry Mixtures. Pour the wet ingredients into the dry mixture and stir gently until just combined. Avoid overmixing to keep the batter light.
- Fill Muffin Cups. Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full to allow room for rising.
- Bake the Cruffins. Place the muffin tin in the oven and bake for 15 minutes or until the cruffins are golden brown on top and a toothpick inserted comes out clean.
- Coat with Cinnamon Sugar. While warm, roll each cruffin in the cinnamon sugar mixture (sugar and cinnamon combined) to coat the outside for that classic churro flavor.
Notes
- Make sure the butter is fully melted but not hot when combining with eggs to avoid scrambling.
- Do not overmix the batter to maintain a tender texture.
- Rolling the cruffins in cinnamon sugar while warm helps the coating stick better.
- Use a non-stick muffin tin or grease well to prevent sticking.
- Serve fresh for best taste and texture.
