Instructions
- Make the crepe batter: In a blender, combine oat flour, vanilla protein powder, milk, eggs, cinnamon, vanilla extract, Greek yogurt, and honey or maple syrup. Blend until smooth. Let the batter rest for 5 minutes to allow the flour to hydrate and batter to thicken slightly.
- Cook the crepes: Heat a non-stick pan over medium heat. Pour a small amount of batter into the pan, swirling it to evenly coat the surface. Cook the crepe for 1-2 minutes until the edges lift easily and the bottom is lightly golden. Flip and cook the other side for another 1-2 minutes. Remove and set aside on a plate. Repeat until all batter is used.
