Instructions

- Mash the Potatoes: Using a potato masher or hand mixer, mash the cooked potatoes until fluffy and smooth, ensuring no large lumps remain.
- Add Butter and Milk: Gradually incorporate 4 tablespoons of butter and slowly pour in the milk or cream, continuing to mash until you achieve a creamy and smooth texture. Season with salt and pepper to taste.
- Sauté the Cabbage: While the potatoes cook, heat olive oil or butter in a large skillet over medium heat. Add the shredded cabbage and sauté for 5-7 minutes, stirring occasionally until softened and tender. Season with salt and pepper.
- Combine Ingredients: Add the cooked cabbage and chopped green onions to the mashed potatoes, mixing thoroughly to evenly distribute all flavors.
- Serve: Serve the colcannon hot, topped with an additional pat of butter. Garnish with extra green onions if desired for added freshness and color.
