Description

A delightful Cranberry White Chocolate Tart featuring a smooth white chocolate ganache topped with a tart cranberry compote, set in a buttery pre-baked tart crust. Perfect for festive occasions or as an elegant dessert, this tart combines creamy sweetness with a tangy fruit topping.

Ingredients

Scale

For the Cranberry Compote

  • 2 cups fresh cranberries
  • 0.33 cup granulated sugar
  • 1 teaspoon orange zest
  • 0.5 teaspoon vanilla extract

For the White Chocolate Ganache

  • 8 oz white chocolate, chopped
  • 0.5 cup heavy cream
  • 2 tablespoons unsalted butter

Other

  • 1 9-inch tart crust (pre-baked)
  • Powdered sugar (optional, for garnish)

Instructions

  1. Prepare the cranberry compote: In a saucepan over medium heat, combine 2 cups fresh cranberries, 0.33 cup granulated sugar, and 1 teaspoon orange zest. Cook for 7 to 9 minutes until the cranberries burst and the mixture slightly thickens. Remove from heat and stir in 0.5 teaspoon vanilla extract. Let the compote cool completely.
  2. Prepare the white chocolate ganache: Chop 8 oz white chocolate and place it in a heatproof bowl. In a small saucepan, heat 0.5 cup heavy cream and 2 tablespoons unsalted butter until steaming but not boiling. Pour this hot cream mixture over the white chocolate and let it sit for 1 minute. Then stir gently until the ganache is smooth and fully melted.
  3. Assemble the tart: Pour the white chocolate ganache into the pre-baked 9-inch tart shell and smooth the surface with a spatula.
  4. Add cranberry topping: Spoon the cooled cranberry compote over the ganache layer, spreading gently or swirling slightly for decorative effect.
  5. Chill and serve: Refrigerate the tart for at least 2 hours until set. Just before serving, dust the tart with powdered sugar if desired for an elegant finish.

Notes

  • Ensure the tart crust is fully pre-baked to prevent sogginess.
  • Use fresh cranberries for best tartness and texture.
  • The tart must chill thoroughly to allow the ganache to set properly.
  • Orange zest adds a fragrant citrus note; fresh zest is preferred.
  • Optional powdered sugar adds a pretty, sweet garnish but can be omitted for less sweetness.
