Instructions
- Cook the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into crumbles with a spoon, about 6 to 8 minutes.
- Sauté Aromatics: Add the diced onion to the pot and sauté for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 1 additional minute until fragrant.
- Add Potatoes and Broth: Stir in the diced potatoes, chicken broth, dried thyme, salt, and black pepper. Bring the mixture to a boil over medium-high heat.
- Simmer Soup: Once boiling, reduce the heat to low, cover the pot, and let the soup simmer for 15 to 20 minutes, or until the potatoes are tender when pierced with a fork.
- Add Cream and Greens: Stir in the heavy cream and chopped kale or spinach. Allow the soup to simmer uncovered for another 5 minutes, until the greens are wilted and the soup is heated through.
