  • 4 cups diced potatoes (Yukon Gold or Russet)

Soup Base & Seasonings

  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Finishing Ingredients

  • 1 cup heavy cream
  • 1 cup chopped kale or spinach
  • 1/2 cup grated Parmesan cheese (optional)
  • Chopped fresh parsley for garnish (optional)


Instructions

  1. Cook the Sausage: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the Italian sausage and cook until browned, breaking it into crumbles with a spoon, about 6 to 8 minutes.
  2. Sauté Aromatics: Add the diced onion to the pot and sauté for 3 to 4 minutes until softened. Stir in the minced garlic and cook for 1 additional minute until fragrant.
  3. Add Potatoes and Broth: Stir in the diced potatoes, chicken broth, dried thyme, salt, and black pepper. Bring the mixture to a boil over medium-high heat.
  4. Simmer Soup: Once boiling, reduce the heat to low, cover the pot, and let the soup simmer for 15 to 20 minutes, or until the potatoes are tender when pierced with a fork.
  5. Add Cream and Greens: Stir in the heavy cream and chopped kale or spinach. Allow the soup to simmer uncovered for another 5 minutes, until the greens are wilted and the soup is heated through.
