Description

This Crustless Spinach Quiche is a delicious and wholesome breakfast or brunch option that combines eggs, cheese, and nutrient-packed spinach for a satisfying meal without the added carbs of a crust. It’s easy to prepare, gluten-free, and customizable with your favorite veggies or bacon, perfect for a healthy start to your day.

Ingredients

Scale

Main Ingredients

  • 1 tablespoon olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 5 large eggs
  • 1 cup whole milk
  • 1 cup shredded cheddar cheese or Swiss cheese
  • 1 cup cooked spinach (thawed and drained if frozen)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • Pinch of nutmeg (optional)
  • ¼ cup grated Parmesan cheese for topping

Instructions

  1. Preheat Oven and Prepare Dish: Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or a similar round baking dish well to prevent sticking.
  2. Sauté Onion and Garlic: In a skillet over medium heat, warm the olive oil. Add the finely chopped onion and sauté until soft and translucent, about 5 minutes. Add minced garlic and cook for an additional minute. Remove from heat and set aside.
  3. Mix Eggs and Dairy: In a large mixing bowl, whisk together the 5 large eggs and 1 cup of whole milk until well combined.
  4. Add Cheese and Vegetables: Stir into the egg mixture the shredded cheddar or Swiss cheese, cooked spinach, sautéed onion and garlic, salt, black pepper, and nutmeg if using. Mix well to incorporate all ingredients evenly.
  5. Assemble in Dish: Pour the combined mixture into the prepared pie dish, spreading evenly. Sprinkle the grated Parmesan cheese evenly over the top to add a golden, flavorful crust once baked.
  6. Bake the Quiche: Place the dish in the preheated oven and bake for 35 to 40 minutes. The quiche is done when the center is set and the top is lightly golden brown.
  7. Cool and Serve: Remove from oven and let cool for 5 to 10 minutes before slicing. Serve warm or at room temperature for a delicious and wholesome meal.

Notes

  • You can use fresh spinach instead of frozen; just cook and drain well before use to avoid excess moisture.
  • Add chopped cooked bacon, mushrooms, or bell peppers for extra flavor and texture variations.
  • For a lighter version, substitute whole milk with low-fat milk or a milk alternative.
  • Ensure the spinach is thoroughly drained to prevent a watery quiche.
