Instructions

  1. Make the filling: In a large skillet, heat a little oil over medium heat. Add the chopped onion and garlic and sauté until softened, about 3-4 minutes. Add the ground beef (or lamb) and cook until browned. Stir in the carrot, peas, beef broth, tomato paste, Worcestershire sauce, and dried thyme. Season with salt and pepper to taste. Let the mixture simmer for 10-15 minutes until the vegetables are tender and the filling thickens. If needed, stir in a tablespoon of flour to help thicken the mixture. Set aside to cool slightly.
  2. Prepare the crust: In a large bowl, mix together the flour and salt. Cut in the cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs. Gradually add ice water, one tablespoon at a time, until the dough comes together. Divide the dough into two portions, one slightly larger than the other (for the base and top).
  3. Assemble the pie: Preheat the oven to 375°F (190°C). Roll out the larger portion of dough on a lightly floured surface and fit it into a 9-inch pie pan. Add the cooled meat filling into the crust, spreading it evenly. Roll out the smaller portion of dough and place it over the filling, trimming any excess dough.
