Meat Mixture
- 1 pound ground beef
- 1/2 pound ground Italian sausage (optional for added flavor)
- 1 packet taco seasoning
- 1/2 cup diced onion
- 1/2 cup diced bell pepper
Wet Ingredients
- 2 large eggs
- 1/2 cup sour cream
- 1/2 cup milk
- 1/4 cup ketchup
Seasonings
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon ground black pepper
Other
- 3 cups crushed Nacho Cheese Doritos
- 1 1/2 cups shredded cheddar cheese
- Chopped green onions or cilantro for garnish (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish or line it with parchment paper to prevent sticking and ease cleanup.
- Cook Meat: In a large skillet over medium heat, cook the ground beef and Italian sausage (if using) until browned and no longer pink, breaking up the meat as it cooks. Drain excess fat from the skillet to avoid greasiness in the casserole.
- Cook Vegetables & Season: Add diced onion and bell pepper to the skillet with the meat. Cook for 3–4 minutes until the vegetables soften. Stir in the taco seasoning until all ingredients are well coated. Remove from heat and set aside.
- Mix Wet Ingredients & Combine: In a large bowl, whisk together the eggs, sour cream, milk, ketchup, garlic powder, salt, and black pepper. Stir in the cooked meat and vegetable mixture along with 1 cup of shredded cheddar cheese until everything is evenly combined.
- Layer Casserole: Spread half of the crushed Doritos evenly on the bottom of the prepared baking dish. Spoon the meat mixture evenly over the chip layer. Top with the remaining crushed Doritos, then sprinkle the remaining 1/2 cup of shredded cheddar cheese on top.
- Bake: Place the casserole uncovered in the preheated oven. Bake for 25–30 minutes until the cheese is melted, bubbly, and the casserole is heated through.
- Garnish & Serve: Remove from the oven and garnish with chopped green onions or cilantro if desired. Serve hot, enjoying the crunchy, cheesy, flavorful layers.
Notes
- You can omit the Italian sausage if you prefer a simpler beef flavor or want to reduce fat content.
- For a spicier kick, add diced jalapeños to the vegetable mix or use spicy Doritos.
