Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking and make cleanup easier.
  2. Make the sauce: In a large bowl, mix together the condensed cream of chicken soup, undrained Rotel diced tomatoes and green chilies, sour cream, and taco seasoning until the mixture is smooth and well combined.
  3. Layer the casserole: Spread a thin layer of the prepared sauce on the bottom of the baking dish. Arrange a layer of tortilla quarters over the sauce. Add a third of the shredded chicken evenly, then sprinkle half of the black beans and corn if using. Top this with some sauce and a portion of the shredded Mexican blend cheese.
