Instructions
- Preheat the oven: Set your oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish to prevent sticking and make cleanup easier.
- Make the sauce: In a large bowl, mix together the condensed cream of chicken soup, undrained Rotel diced tomatoes and green chilies, sour cream, and taco seasoning until the mixture is smooth and well combined.
- Layer the casserole: Spread a thin layer of the prepared sauce on the bottom of the baking dish. Arrange a layer of tortilla quarters over the sauce. Add a third of the shredded chicken evenly, then sprinkle half of the black beans and corn if using. Top this with some sauce and a portion of the shredded Mexican blend cheese.
- Repeat the layers: Continue layering tortillas, chicken, black beans, corn, sauce, and cheese until all ingredients have been used, finishing with a final layer of sauce and cheese on top.
