Scale
Main Ingredients
- 1 (26oz) bag frozen meatballs
- 2 cups baby carrots
- 5 stalks celery, chopped
Gravy and Seasoning
- 2 packets brown gravy mix
- 1 packet Lipton onion soup mix
- 2 cups water
- ¼ cup butter, sliced into small pieces
Side
- 1 (24oz) container refrigerated mashed potatoes (or homemade mashed potatoes)
Instructions
- Combine Ingredients: Place the frozen meatballs, baby carrots, and chopped celery into your slow cooker, layering them evenly.
- Make Gravy Mixture: In a small bowl or large measuring cup, whisk together the two packets of brown gravy mix with two cups of cold water until smooth. Pour this mixture over the meatballs and vegetables, then gently toss to coat them evenly.
- Add Seasoning: Sprinkle the packet of Lipton onion soup mix evenly over the top of the ingredients in the slow cooker for added flavor.
- Add Butter: Slice the ¼ cup of butter into small pieces and distribute them evenly on top to enrich the dish.
- Cook Slowly: Cover and cook the mixture on LOW heat for 3 to 4 hours. Stir the contents halfway through cooking to ensure even heat distribution and that the butter and seasonings are well incorporated.
- Prepare Mashed Potatoes: Just before serving, heat the refrigerated mashed potatoes according to the package instructions or prepare your homemade mashed potatoes. Serve alongside the meatball pot roast and enjoy!
Notes
- You can add fresh herbs like parsley or thyme for additional flavor.
- For a thicker gravy, mix an extra tablespoon of brown gravy mix with a little cold water and stir into the slow cooker near the end of cooking.
- This recipe is great for meal prepping; leftovers reheat well.
- Feel free to substitute frozen homemade meatballs for a more personalized taste.
