Instructions
- Preheat Oven: Preheat your oven to 375°F to prepare for baking the cobbler.
- Prepare Peach Filling: In a large bowl, combine the sliced peaches, 1/2 cup granulated sugar, brown sugar, lemon juice, cinnamon, nutmeg, and cornstarch. Toss everything together until the peaches are well coated, then pour this mixture into a 9×13-inch baking dish.
- Make the Batter: In another bowl, whisk together the flour, remaining 1/4 cup granulated sugar, baking powder, and salt. Add the melted butter, milk, and vanilla extract and stir gently until just combined to form the batter.
- Assemble Cobbler: Spoon the batter evenly over the peach mixture in the baking dish. The batter won’t completely cover the peaches, which creates a lovely rustic look.
- Bake: Place the baking dish in the oven and bake for 40 to 45 minutes, or until the topping is golden brown and the peach filling is bubbling around the edges.
- Cool & Serve: Remove the cobbler from the oven and let it cool slightly for about 10 minutes before serving. Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream.
