- 1 (8 oz) block cream cheese, softened
- 1 (10 oz) can diced tomatoes with green chiles (like Rotel)
- ½ cup shredded cheddar cheese (optional)
- Sliced green onions or jalapeños for garnish (optional)
- Tortilla chips or crackers for serving
Instructions
- Cook the Sausage: In a large skillet over medium heat, cook the ground sausage until fully browned and crumbly, about 6–8 minutes. Drain any excess grease if needed.
- Melt Cream Cheese: Reduce heat to low and stir in the softened cream cheese until melted and fully combined with the cooked sausage, creating a creamy base.
- Add Tomatoes and Cheese: Stir in the entire can of diced tomatoes with green chiles (do not drain). If using, add shredded cheddar cheese and stir until it melts and the mixture is smooth and creamy.
- Heat Through: Cook for an additional 2–3 minutes on low heat until the dip is hot and well combined.
- Serve and Garnish: Transfer the dip to a serving dish or keep warm in a slow cooker set to warm. Garnish with sliced green onions or jalapeños if desired. Serve with tortilla chips, crackers, or veggie sticks for dipping.
