Description

Easy Szechuan Noodles are a quick and flavorful Asian-inspired dish featuring noodles tossed in a spicy, savory sauce made with garlic, ginger, soy sauce, and Szechuan chili oil. Perfect as a main course or side, this recipe balances heat and depth of flavor, and can be served warm or cold with optional protein or crunchy toppings.

Ingredients

Scale

Main Ingredients

  • 8 ounces noodles (spaghetti, ramen, or Chinese wheat noodles)
  • 2 tablespoons sesame oil
  • 3 garlic cloves, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1–2 tablespoons Szechuan chili oil (with sediment for heat)
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sugar
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 2 green onions, sliced
  • 1 tablespoon toasted sesame seeds

Optional Toppings

  • Crushed peanuts
  • Shredded cucumber
  • Cooked ground pork or tofu

Instructions

  1. Cook Noodles: Boil the noodles according to package instructions until al dente. Drain well and set aside to cool slightly.
  2. Prepare Sauce: Heat sesame oil in a large skillet or wok over medium heat. Add minced garlic and grated ginger, sautéing for about 30 seconds until fragrant but not browned.
  3. Add Flavorings: Stir in soy sauce, rice vinegar, Szechuan chili oil, hoisin sauce, sugar, and crushed red pepper flakes if using. Cook the sauce mixture for 1 minute to blend the flavors.
  4. Toss Noodles in Sauce: Add the cooked noodles to the skillet and toss thoroughly to coat the noodles evenly with the sauce mixture. Remove from heat.
  5. Garnish and Serve: Sprinkle sliced green onions and toasted sesame seeds over the noodles. Serve warm or at room temperature with optional toppings such as crushed peanuts, shredded cucumber, or cooked ground pork or tofu.

Notes

  • Adjust the amount of Szechuan chili oil to control the spice level according to your preference.
  • These noodles can be served as a standalone dish or paired with grilled chicken, tofu, or shrimp for added protein.
  • For a refreshing cold noodle salad, chill the prepared noodles before serving and top with shredded cucumber and crushed peanuts.
