Egg Whites
- 4 large egg whites
- 1/8 teaspoon salt
- 1/8 teaspoon black pepper
Sandwich
- 1 whole wheat English muffin, split and toasted
- 1 slice reduced fat cheddar cheese
- 2 slices tomato
- 1 handful fresh spinach leaves
- 1 teaspoon olive oil or cooking spray
Instructions
- Prepare the skillet: Heat a small nonstick skillet over medium heat and lightly coat with olive oil or cooking spray.
- Whisk the egg whites: In a bowl, whisk the egg whites with salt and black pepper until slightly frothy to incorporate air for fluffiness.
- Cook the egg whites: Pour the egg whites into the skillet and cook for 2 to 3 minutes until mostly set on the bottom.
- Flip and finish cooking: Gently flip the egg whites and cook for another 1 to 2 minutes until fully cooked through.
- Melt the cheese: During the last minute of cooking, place the slice of reduced-fat cheddar cheese on top of the egg whites to melt.
- Toast the muffin: Toast the split whole wheat English muffin until golden brown.
- Assemble the sandwich: Place the cooked egg white and melted cheese on the bottom half of the toasted muffin, top with tomato slices and fresh spinach leaves, then cover with the top half of the muffin. Serve warm.
