Sawmill Gravy

  • 2 cups milk
  • ¼ cup sausage drippings (add butter if insufficient drippings)
  • ¼ cup flour
  • ½ teaspoon salt (or to taste)
  • ¼ teaspoon pepper (or to taste)


Instructions

  1. Cook Sausage: In a cast iron pan over medium heat, cook the breakfast sausage until fully browned and cooked through. Once done, remove the sausage from the pan and set aside, reserving ¼ cup of the rendered fat or drippings in the pan for the gravy.
  2. Make Sawmill Gravy: To the reserved sausage drippings, add ¼ cup flour. Cook over medium heat for 5-10 minutes, stirring constantly until the mixture turns golden brown. Gradually pour in the 2 cups of milk while stirring continuously until the gravy thickens. Season with ½ teaspoon salt and ¼ teaspoon pepper, adjusting to taste.
  3. Toast English Muffins: While preparing the gravy, lightly toast the English muffins to give them a crisp base for the toppings.
  4. Scramble Eggs: In a separate non-stick skillet, scramble the eggs with a dash of milk to make them fluffy. Cook over medium-low heat until just set and soft.
  5. Assemble: Spread a generous layer of sawmill gravy onto each toasted English muffin half. Top each with scrambled eggs, a slice of mild cheddar cheese, and crumbled cooked sausage.
