Instructions

  1. Combine ingredients: In a medium saucepan, mix the granulated sugar, light corn syrup, and water. Stir continuously over medium heat until the sugar completely dissolves into the liquid.
  2. Boil to hard crack stage: Increase the heat and bring the mixture to a rolling boil. Monitor the temperature closely using a candy thermometer and cook until it reaches 300°F, which is the hard crack stage, ensuring the lollipops will harden properly.
  3. Add Kool-Aid and baking soda: Remove the saucepan from the heat and quickly stir in the Kool-Aid powder and baking soda. Stir carefully as the mixture will bubble and fizz due to the baking soda reacting with the acid in Kool-Aid.
  4. Pour into molds: Immediately pour the hot candy mixture into lollipop molds, filling each about halfway. Insert the lollipop sticks into the center of each mold while the candy is still warm and pliable.
  5. Cool and harden: Allow the lollipops to cool and harden at room temperature for 30 minutes to an hour. This will ensure they set properly and become firm.
  6. Remove and serve: Once fully set, carefully remove the lollipops from the molds and enjoy your fizzy, flavorful candy treats.
