Description

A delicious Italian-inspired focaccia sandwich filled with tender roast chicken, provolone cheese, roasted red peppers, and fresh greens. This quick and easy recipe combines flavorful ingredients with a simple homemade mayo-mustard spread, perfect for a gourmet lunch or casual dinner.

Ingredients

Scale

For the Sandwich:

  • 1 loaf focaccia bread (about 12×8 inches)
  • 2 cups cooked roast chicken (shredded or sliced)
  • 4 slices provolone or mozzarella cheese
  • 1 cup arugula or mixed greens
  • 1/2 cup roasted red peppers (sliced)
  • 1/4 cup red onion (thinly sliced)

For the Spread:

  • 1/4 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste

Instructions

  1. Prepare the Focaccia: Slice the focaccia loaf in half horizontally and place both halves cut-side up on a flat surface.
  2. Make the Spread: In a small bowl, combine mayonnaise, Dijon mustard, olive oil, dried oregano, garlic powder, and a pinch of salt and black pepper. Mix well until smooth and evenly blended.
  3. Apply the Spread: Evenly spread the prepared mayonnaise mixture over both cut sides of the focaccia halves.
  4. Layer the Ingredients: On the bottom half of the focaccia, layer the provolone cheese slices first, followed by the cooked roast chicken, sliced roasted red peppers, and thinly sliced red onion.
  5. Add Greens and Close the Sandwich: Top the layered fillings with arugula or mixed greens, then place the top half of the focaccia over the fillings. Press down gently to secure the sandwich.
  6. Optional Toasting: For a warm and melty sandwich, toast it in a panini press or preheat your oven to 350°F (175°C) and warm the sandwich for 5 to 7 minutes until the cheese softens and the bread is heated through.
  7. Slice and Serve: Cut the sandwich into squares or rectangles to serve. Enjoy immediately or pack for later.

Notes

  • This sandwich can be prepared ahead of time and tightly wrapped for picnics, lunches, or on-the-go meals.
  • Enhance flavor by adding sun-dried tomatoes or a smear of pesto to the spread.
  • Substitute roast chicken with turkey if preferred.
  • To keep it lighter, you may reduce the mayonnaise or cheese quantity.
  • Use fresh focaccia for the best texture and flavor.
