For the Spread:
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon olive oil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon garlic powder
- Salt and black pepper to taste
Instructions
- Prepare the Focaccia: Slice the focaccia loaf in half horizontally and place both halves cut-side up on a flat surface.
- Make the Spread: In a small bowl, combine mayonnaise, Dijon mustard, olive oil, dried oregano, garlic powder, and a pinch of salt and black pepper. Mix well until smooth and evenly blended.
- Apply the Spread: Evenly spread the prepared mayonnaise mixture over both cut sides of the focaccia halves.
- Layer the Ingredients: On the bottom half of the focaccia, layer the provolone cheese slices first, followed by the cooked roast chicken, sliced roasted red peppers, and thinly sliced red onion.
