Description

Salad Ingredients

  • 2 ears fresh corn, kernels cut off the cob (or 1½ cups cooked corn)
  • 1½ cups cherry tomatoes, halved
  • 8 ounces fresh mozzarella balls (bocconcini or ciliegine), halved
  • ¼ cup fresh basil leaves, torn or thinly sliced
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze (plus more for drizzling)
  • Salt and black pepper to taste


Instructions

  1. Combine Ingredients: In a large bowl, combine the corn kernels, cherry tomatoes, and mozzarella balls to form the base of the salad.
  2. Add Basil and Dressing: Add the fresh basil leaves, extra virgin olive oil, and balsamic glaze to the bowl.
  3. Toss Salad: Gently toss all the ingredients together until everything is well mixed and evenly coated with the dressing.
  4. Season: Season the salad with salt and black pepper according to your taste preferences.
  5. Let Flavors Develop: Allow the salad to sit at room temperature for 10–15 minutes so the flavors can meld and develop.
  6. Serve with Extra Drizzle: Just before serving, drizzle additional balsamic glaze on top if desired for extra flavor and presentation.

Notes

  • Grilled or charred corn adds a smoky depth of flavor to this salad.
