Description

This Frozen Cheesecake Cookie Icebox Cake is a no-bake, layered dessert featuring creamy cheesecake filling combined with crushed cookies and graham crackers. It’s frozen until firm and then served chilled, making it a perfect refreshing treat for summer or any occasion that calls for an easy yet indulgent dessert.

Ingredients

Scale

Cheesecake Mixture

  • 2 cups heavy whipping cream
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract

Cookie Layers

  • 1 1/2 cups crushed chocolate chip cookies (about 20 cookies)
  • 1/2 cup crushed graham crackers
  • 1/4 cup mini chocolate chips (optional)
  • Extra cookie crumbs for topping

Instructions

  1. Prepare the Whipped Cream: In a large mixing bowl, beat the heavy whipping cream until stiff peaks form, ensuring a light and fluffy consistency that will provide the base texture for the cheesecake mixture.
  2. Make the Cream Cheese Mixture: In a separate bowl, beat the softened cream cheese, powdered sugar, and vanilla extract together until smooth and creamy. This mixture forms the rich, tangy component of the cheesecake layers.
  3. Combine Mixtures: Gently fold the whipped cream into the cream cheese mixture. Doing this carefully will keep the mixture airy and light, perfect for layering.
  4. Layer the Cake: Line a 9×5-inch loaf pan or an 8-inch square pan with parchment or plastic wrap. Spread a thin layer of the cheesecake mixture at the bottom, then sprinkle a layer of crushed chocolate chip cookies and graham crackers over it. Repeat layering with the cheesecake mixture and cookie crumbs, finishing with a layer of cheesecake mixture on top.
  5. Decorate and Freeze: Sprinkle the top with additional cookie crumbs and mini chocolate chips, if using. Cover the pan tightly and place it in the freezer. Freeze for at least 4 hours or until the dessert is firm enough to slice.
  6. Serve: Before serving, allow the icebox cake to sit at room temperature for 10 to 15 minutes to soften slightly for easier slicing. Slice into portions and serve chilled.

Notes

  • Feel free to use your favorite cookies such as Oreos, shortbread, or chocolate chip cookies to customize the flavor.
  • Add chopped candy bars or drizzle chocolate sauce over the layers before freezing for an extra indulgent touch.
  • This dessert can be stored in the freezer for up to one week when wrapped well.
  • Allowing the cake to soften slightly at room temperature enhances the texture and flavor experience.
