Garlic Confit Butter Sauce

  • ¼ cup garlic confit (soft garlic cloves in oil)
  • 3 tbsp garlic confit oil
  • 4 tbsp unsalted butter (softened)
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 tbsp chopped fresh parsley
  • Salt and black pepper to taste

Instructions

  1. Prepare the garlic butter: In a small bowl, mash the garlic confit cloves with the softened butter until smooth and creamy. Stir in garlic confit oil, lemon juice, lemon zest, chopped parsley, and season with salt and black pepper to taste. Mix well to combine all flavors.
  2. Butterfly the prawns and apply butter: Lay the butterflied prawns open on a tray, flesh side up. Spoon or brush the prepared garlic confit butter generously over each prawn, ensuring good coverage to infuse the flavors.
  3. Preheat the grill: Heat your BBQ or grill to medium-high heat to ensure it’s ready for cooking the prawns evenly and quickly.
  4. Grill the prawns – first side: Place the prawns on the grill with the flesh side down. Cook for 2–3 minutes until you see slight charring and the prawns begin to turn opaque.
  5. Grill the prawns – second side: Flip the prawns to shell side down and cook for another 2–3 minutes. While cooking, baste them with any remaining garlic butter mixture to keep them moist and flavorful.
  6. Serve: Remove prawns from grill once fully cooked, opaque, and slightly charred. Serve immediately with fresh lemon wedges and extra chopped parsley if desired for garnish and brightness.

  • For extra flavor, add a pinch of chili flakes to the garlic butter before applying to the prawns.
