Instructions
- Mix Ingredients: In a medium bowl or jar, whisk together the almond milk, chopped or blended peaches, chia seeds, maple syrup or honey, and vanilla extract until everything is well combined.
- Initial Rest: Allow the mixture to sit for 10 minutes, then stir again to break up any chia seed clumps and ensure even distribution.
- Refrigerate: Cover the bowl or jar and refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb liquid and thicken to a pudding consistency.
- Serve: Before serving, give the pudding a quick stir. Top with extra diced peaches and a sprig of mint if desired. Serve chilled for the best texture and flavor.
