Description

A quick and flavorful Ground Turkey Egg Roll Bowl that combines lean ground turkey with fresh vegetables and Asian-inspired seasonings, perfect for a healthy weeknight dinner.

  • 1 cup shredded carrots
  • 3 green onions, chopped (separate whites and greens)

  • 1 Tbsp olive oil
  • ¼ cup plus 1 Tbsp low-sodium soy sauce
  • 2 tsp sriracha
  • 1-2 Tbsp sweet chili sauce
  • 1 Tbsp toasted sesame oil

  • ½ tsp black pepper
  • ½ tsp salt (adjust to taste)


Instructions

  1. Heat the Oil and Sauté Aromatics: In a large, flat bottomed sauté pan or skillet, heat 1 tablespoon of olive oil over medium-high heat. Add the chopped whites of the green onions and sauté for 1-2 minutes until fragrant.
  2. Cook the Ground Turkey: Add the ground turkey to the pan, breaking it into smaller chunks with a spatula. Season with garlic powder if desired. Cook until browned and no longer pink in the center, about 5-6 minutes. During the last minute, add the minced garlic and grated ginger, stirring to release their flavors.
  3. Add Vegetables and Soy Sauce: Stir in the cole slaw mix, shredded carrots, and soy sauce. Toss everything together and cook for 4-6 minutes, stirring frequently until the vegetables are tender but still slightly crisp.
  4. Season and Combine Final Ingredients: Reduce heat to low. Add the sriracha, sweet chili sauce, toasted sesame oil, chopped green parts of the green onions, and chopped cilantro. Toss thoroughly to combine all flavors. Season with salt and pepper and, if desired, add more soy sauce for moisture.
  5. Serve: Transfer the egg roll bowls to plates or bowls. Garnish with additional chopped cilantro and sesame seeds if available. Enjoy immediately while warm.
