Instructions

  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats, whole wheat flour, baking soda, and salt. Stir these together to evenly distribute the leavening and seasoning.
  3. Combine Wet Ingredients: In a separate bowl, whisk the melted coconut oil, honey (or maple syrup), coconut sugar (or brown sugar), and vanilla extract until well combined.
  4. Form Crumble Mixture: Pour the wet mixture into the dry ingredients and stir until you achieve a crumbly but cohesive texture.
  5. Create the Crust: Press about two-thirds of this oat mixture firmly into the bottom of the prepared baking pan to form the crust layer.
  6. Prepare Strawberry Filling: In another bowl, toss the finely chopped strawberries with cornstarch and lemon juice. This will thicken the filling while adding a bright, fresh flavor.
