Description

High Protein Egg Bites are a delicious and nutritious breakfast option packed with eggs, Greek yogurt, cottage cheese, and fresh vegetables. Baked to perfection, these savory bites are perfect for meal prep and provide a satisfying way to start your day with a boost of protein and wholesome ingredients.

Ingredients

Scale

Egg Mixture

  • 6 large eggs
  • 1/2 cup plain Greek yogurt
  • 1/2 cup cottage cheese

Vegetables and Cheese

  • 1/3 cup chopped spinach
  • 1/4 cup diced bell pepper
  • 1/2 cup shredded cheddar cheese

Seasonings and Optional Add-ins

  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup cooked bacon or turkey sausage (optional)

Instructions

  1. Preheat and prepare muffin tin. Preheat your oven to 350°F (175°C). Lightly grease a 12-cup muffin tin or line it with silicone molds to ensure the egg bites do not stick.
  2. Blend main ingredients. In a blender, combine the eggs, Greek yogurt, and cottage cheese. Blend until the mixture is smooth and frothy, which helps create a light texture for the egg bites.
  3. Mix in vegetables and cheese. Pour the blended mixture into a large bowl. Stir in the shredded cheddar cheese, chopped spinach, and diced bell pepper. Season the mixture with salt and black pepper to taste.
  4. Fill muffin cups and add meat (optional). Evenly pour the prepared mixture into the muffin cups. If you are using bacon or turkey sausage, evenly distribute it into each cup for an added savory flavor.
  5. Bake and cool. Bake the egg bites in the preheated oven for 22 to 25 minutes, or until the centers are fully set and the tops are lightly golden. Let them cool for 5 minutes before removing the bites from the muffin tin to serve safely and maintain their shape.

Notes

  • Silicone molds work well to prevent sticking and make removal easier.
  • Feel free to customize fillings by adding other vegetables or cheeses.
  • For a vegetarian option, omit the bacon or turkey sausage.
  • These egg bites can be stored in the refrigerator for up to 4 days and reheated in the microwave.
  • Make sure to allow the egg bites to cool before removing to avoid breakage.
