Instructions
- Chill the ingredients: Refrigerate the can of coconut milk overnight if using, then scoop out only the thick cream part. Also, chill the mixing bowl to ensure the cream whips up better.
- Whip the cream: Using a hand mixer or stand mixer, beat the heavy cream or coconut cream until stiff peaks form. This means the cream will hold its shape firmly when the beaters are lifted.
- Add the remaining ingredients: Gently fold in the unsweetened cocoa powder, Dutch-process cocoa powder, sweetener, vanilla extract, and instant coffee (if using), mixing until the mousse is smooth and fluffy.
