Description

Delight in these homemade Keto Pop Tarts, a low-carb, grain-free twist on the classic breakfast treat. Made with almond flour and sugar-free jam, these pop tarts are perfect for a keto-friendly snack or breakfast, offering a deliciously flaky crust with a sweet filling and a luscious vanilla glaze.

Ingredients

Scale

Dough Ingredients

  • 1 ½ cups almond flour
  • 1 egg
  • ¼ cup butter, softened
  • 1 tablespoon erythritol (or sweetener of choice)
  • 2 tablespoons water

Filling

  • ¼ cup sugar-free jam (strawberry, raspberry, or your favorite)

Glaze

  • 2 tablespoons powdered erythritol
  • ½ teaspoon vanilla extract
  • 1 teaspoon water

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking.
  2. Prepare the Dough: In a mixing bowl, combine almond flour, egg, softened butter, erythritol, and water. Stir until a smooth dough forms, ensuring all ingredients are well incorporated.
  3. Roll and Cut the Dough: Lightly flour a clean surface with almond flour and roll the dough out into a thin rectangle. Cut the dough into small rectangular pieces roughly the size of traditional pop tarts.
  4. Add the Jam Filling: Place about 1 teaspoon of sugar-free jam in the center of half of the rectangular dough pieces.
  5. Seal the Pop Tarts: Fold a dough rectangle over the jam-filled one to form a pocket. Press the edges firmly to seal, and use a fork to crimp the edges for a secure seal and decorative finish.
  6. Bake the Pop Tarts: Arrange the sealed pop tarts on the prepared baking sheet. Bake in the preheated oven for 12-15 minutes or until the crust turns golden brown.
  7. Cool and Glaze: Remove from the oven and allow the pop tarts to cool completely on a wire rack. Meanwhile, prepare the glaze by mixing powdered erythritol, vanilla extract, and water until smooth. Drizzle the glaze over the cooled pop tarts for added sweetness and shine.
  8. Serve: Enjoy the keto-friendly pop tarts fresh as a delightful breakfast or snack treat.

Notes

  • You can substitute erythritol with your preferred low-carb sweetener like stevia or monk fruit.
  • Make sure the butter is softened but not melted to create a flaky texture.
  • Use sugar-free jam to keep these pop tarts keto-compliant.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
  • Reheat in a toaster oven for a warm, fresh-baked flavor.
