Description

Delicious and low-carb Keto Pop Tarts made with almond flour and sugar-free jam. These homemade treats are perfect for a keto-friendly breakfast or snack, featuring a buttery, flaky crust and a sweet, sugar-free filling, topped with a light vanilla glaze.

Ingredients

Scale

For the Dough

  • 1 ½ cups almond flour
  • 1 egg
  • ¼ cup butter, softened
  • 1 tablespoon erythritol (or sweetener of choice)
  • 2 tablespoons water

For the Filling

  • ¼ cup sugar-free jam (strawberry, raspberry, or your favorite)

For the Glaze

  • 2 tablespoons powdered erythritol
  • ½ teaspoon vanilla extract
  • 1 teaspoon water

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
  2. Prepare the Dough: In a mixing bowl, combine almond flour, egg, softened butter, erythritol, and water. Mix thoroughly until you achieve a smooth and pliable dough.
  3. Roll and Cut the Dough: On a lightly floured surface, roll out the dough into a thin rectangle. Cut the dough into smaller rectangular shapes, similar in size to traditional pop tarts.
  4. Add the Jam Filling: Spoon about 1 teaspoon of sugar-free jam onto the center of half of the rectangular pieces, leaving space around the edges for sealing.
  5. Seal the Pop Tarts: Fold the dough over the jam to form pockets. Press the edges firmly together and crimp with a fork to ensure they are sealed properly and prevent filling leakage during baking.
  6. Bake the Pop Tarts: Arrange the pop tarts on the prepared baking sheet and bake for 12-15 minutes or until they turn golden brown and firm to the touch.
  7. Cool and Glaze: Transfer the baked pop tarts to a wire rack to cool completely. In a small bowl, mix powdered erythritol, vanilla extract, and water to create a smooth glaze. Drizzle the glaze over the cooled pop tarts.
  8. Serve: Enjoy these keto-friendly pop tarts fresh as a low-carb breakfast or snack option.

Notes

  • To ensure the pop tarts do not become soggy, make sure to seal the edges tightly.
  • You can substitute almond flour with other low-carb flour alternatives if desired.
  • Choose your favorite sugar-free jam to customize the flavor.
  • Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
  • For extra crispiness, lightly toast the pop tarts before serving.
