Ingredients
Scale
Vegetables
- 3 medium russet potatoes, diced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
Protein & Dairy
- 1/2 pound ground breakfast sausage
- 4 large eggs
Oils & Seasonings
- 2 tablespoons olive oil, divided
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 2 tablespoons chopped fresh parsley
Instructions
- Cook the potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced potatoes and cook undisturbed for 5 minutes to develop a crispy surface. Then stir occasionally and continue cooking for another 10 minutes until the potatoes are golden and tender. Remove and transfer to a plate.
- Brown the sausage: In the same skillet, add the ground breakfast sausage. Cook over medium-high heat for 5 to 7 minutes, stirring occasionally, until the sausage is fully browned and cooked through. Remove and set aside with the potatoes.
- Sauté vegetables and season: Add the remaining tablespoon of olive oil to the skillet. Add the sliced onions and bell peppers. Cook over medium heat for 6 to 8 minutes until the vegetables are soft and slightly caramelized. Stir in the minced garlic, salt, black pepper, and smoked paprika. Cook for an additional 1 minute to release the aromas.
- Combine and cook together: Return the cooked potatoes and sausage to the skillet with the sautéed vegetables. Stir well to combine all ingredients and cook for 2 to 3 minutes to let the flavors meld.
- Fry the eggs: In a separate nonstick pan, fry the eggs to your preferred doneness. Sunny-side up or over-easy eggs are ideal to maintain runny yolks that complement the hash.
- Serve and garnish: Top the hash mixture with the fried eggs and sprinkle with chopped fresh parsley. Serve immediately while hot for a delicious breakfast.
Notes
- You can substitute sweet potatoes for russet potatoes for a slightly sweeter flavor.
- Use turkey sausage for a leaner option.
- For extra spice, add a pinch of cayenne pepper along with the smoked paprika.
- Make sure to fry eggs gently on low heat to avoid overcooking.
- Garnishing with fresh herbs like chives or cilantro will add an extra burst of freshness.
