Ingredients
Scale
Vegetables
- 3 medium russet potatoes, diced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 medium onion, sliced
- 2 cloves garlic, minced
Meat
- 1/2 pound ground breakfast sausage
Other
- 2 tablespoons olive oil, divided
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/2 teaspoon smoked paprika
- 4 large eggs
- 2 tablespoons chopped fresh parsley
Instructions
- Cook Potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced potatoes and cook undisturbed for 5 minutes. Then stir occasionally for another 10 minutes until the potatoes are golden brown and tender. Transfer cooked potatoes to a plate.
- Brown Sausage: In the same skillet, add the ground breakfast sausage and cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
- Sauté Vegetables: Add the remaining tablespoon of olive oil to the skillet. Sauté the sliced onion and bell peppers over medium heat until they are soft and slightly caramelized, about 6-8 minutes. Add the minced garlic, salt, black pepper, and smoked paprika and cook everything together for an additional 1 minute to blend the flavors.
- Combine Ingredients: Return the cooked potatoes and browned sausage back into the skillet with the sautéed vegetables. Stir everything together and cook for 2-3 minutes to allow the flavors to meld.
- Fry Eggs: In a separate nonstick pan, fry the eggs to your preference. Sunny-side up or over-easy eggs work best to top the hash.
- Serve: Place the fried eggs on top of the hash and garnish with chopped fresh parsley. Serve immediately while hot.
Notes
- To save time, you can parboil the potatoes before pan-frying to reduce cooking time.
- Use turkey sausage for a leaner option.
- Feel free to add other vegetables like mushrooms or spinach for added nutrition.
- Adjust seasoning to taste, especially salt and smoked paprika.
- Serve with hot sauce or ketchup if desired.
