Description

  • 1 teaspoon salt

  • 4 large eggs
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Cook Potatoes: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the diced potatoes and cook undisturbed for 5 minutes. Then stir occasionally for another 10 minutes until the potatoes are golden brown and tender. Transfer cooked potatoes to a plate.
  2. Brown Sausage: In the same skillet, add the ground breakfast sausage and cook until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside.
  3. Sauté Vegetables: Add the remaining tablespoon of olive oil to the skillet. Sauté the sliced onion and bell peppers over medium heat until they are soft and slightly caramelized, about 6-8 minutes. Add the minced garlic, salt, black pepper, and smoked paprika and cook everything together for an additional 1 minute to blend the flavors.
  4. Combine Ingredients: Return the cooked potatoes and browned sausage back into the skillet with the sautéed vegetables. Stir everything together and cook for 2-3 minutes to allow the flavors to meld.
  5. Fry Eggs: In a separate nonstick pan, fry the eggs to your preference. Sunny-side up or over-easy eggs work best to top the hash.
  6. Serve: Place the fried eggs on top of the hash and garnish with chopped fresh parsley. Serve immediately while hot.
