Description

Louisiana Voodoo Fries are a decadent and flavorful twist on classic fries, featuring tender steamed and crispy baked russet potatoes coated with Cajun seasoning, creamy ranch dressing, and a rich homemade cheddar cheese sauce. Perfect as a hearty snack or a shareable appetizer, these fries bring the vibrant flavors of Louisiana right to your table.

Ingredients

Scale

For the Fries

  • 6 medium russet potatoes
  • 2 tbsp extra virgin olive oil
  • 1–2 tbsp Cajun seasoning
  • 3 tbsp salt (for boiling water)

For the Cheese Sauce

  • 2 tbsp butter
  • 2 tbsp flour
  • â…” cup milk
  • 2 cups shredded cheddar cheese

For Serving

  • ¼ cup creamy ranch dressing (plus extra for dipping)

Instructions

  1. Prepare the Fries: Wash, scrub, and pat dry the potatoes. Peel them and cut into fries approximately ¾ inch wide and 3 inches long to ensure even cooking.
  2. Steam the Potatoes: Boil 1 quart of water, seasoning it with 3 tablespoons of salt. Add the sliced fries to the boiling water and steam them for 10–12 minutes until they are tender but still hold their shape and firmness.
  3. Coat and Bake: Drain the steamed potatoes and transfer them to a large bowl. Drizzle with 2 tablespoons of extra virgin olive oil and toss to evenly coat. Arrange the fries in a single layer on a baking sheet and bake in a preheated oven at 450°F for 10 minutes. After 10 minutes, rotate the pan to ensure even baking and continue baking for another 5–10 minutes until the fries are golden and crispy.
  4. Make the Cheese Sauce: While the fries bake, melt 2 tablespoons of butter in a saucepan over medium heat. Whisk in 2 tablespoons of flour to create a smooth roux. Gradually pour in â…” cup of milk, whisking continuously to prevent lumps. Stir in 2 cups of shredded cheddar cheese until the sauce is melted, smooth, and creamy.
  5. Assemble: Once the fries are baked, sprinkle 1–2 tablespoons of Cajun seasoning over them and gently toss to coat all pieces. Drizzle the fries with ¼ cup of creamy ranch dressing and ¼ cup of the prepared cheddar cheese sauce for rich flavor.
  6. Serve: Serve the Louisiana Voodoo Fries hot with extra cheese sauce and ranch dressing on the side for dipping, making for a delicious, indulgent treat.

Notes

  • For crispier fries, make sure to bake them in a single layer and avoid overcrowding the baking sheet.
  • You can adjust the level of Cajun seasoning based on your spice preference.
  • Use full-fat cheddar cheese for a richer cheese sauce; mild or sharp cheddar can be used to vary flavor.
  • Steaming the potatoes before baking ensures a fluffy interior while the oven crisps the exterior.
  • Serve immediately as these fries are best enjoyed fresh and warm.
