- 2 tbsp extra virgin olive oil
- 1–2 tbsp Cajun seasoning
- 3 tbsp salt (for boiling water)
For the Cheese Sauce
- 2 tbsp butter
- 2 tbsp flour
- â…” cup milk
- 2 cups shredded cheddar cheese
For Serving
- ¼ cup creamy ranch dressing (plus extra for dipping)
Instructions
- Prepare the Fries: Wash, scrub, and pat dry the potatoes. Peel them and cut into fries approximately ¾ inch wide and 3 inches long to ensure even cooking.
- Steam the Potatoes: Boil 1 quart of water, seasoning it with 3 tablespoons of salt. Add the sliced fries to the boiling water and steam them for 10–12 minutes until they are tender but still hold their shape and firmness.
- Coat and Bake: Drain the steamed potatoes and transfer them to a large bowl. Drizzle with 2 tablespoons of extra virgin olive oil and toss to evenly coat. Arrange the fries in a single layer on a baking sheet and bake in a preheated oven at 450°F for 10 minutes. After 10 minutes, rotate the pan to ensure even baking and continue baking for another 5–10 minutes until the fries are golden and crispy.
- Make the Cheese Sauce: While the fries bake, melt 2 tablespoons of butter in a saucepan over medium heat. Whisk in 2 tablespoons of flour to create a smooth roux. Gradually pour in â…” cup of milk, whisking continuously to prevent lumps. Stir in 2 cups of shredded cheddar cheese until the sauce is melted, smooth, and creamy.
- Assemble: Once the fries are baked, sprinkle 1–2 tablespoons of Cajun seasoning over them and gently toss to coat all pieces. Drizzle the fries with ¼ cup of creamy ranch dressing and ¼ cup of the prepared cheddar cheese sauce for rich flavor.
- Serve: Serve the Louisiana Voodoo Fries hot with extra cheese sauce and ranch dressing on the side for dipping, making for a delicious, indulgent treat.
Notes
- For crispier fries, make sure to bake them in a single layer and avoid overcrowding the baking sheet.
- You can adjust the level of Cajun seasoning based on your spice preference.
- Use full-fat cheddar cheese for a richer cheese sauce; mild or sharp cheddar can be used to vary flavor.
- Steaming the potatoes before baking ensures a fluffy interior while the oven crisps the exterior.
- Serve immediately as these fries are best enjoyed fresh and warm.
