Description

Instructions

  1. Prepare salmon: Preheat your oven to 400°F (200°C). Pat the salmon fillets dry with paper towels. Season both sides with salt and black pepper evenly to enhance flavor.
  2. Sear salmon: Heat olive oil in an oven-safe skillet over medium-high heat. Place the salmon fillets skin-side up and sear for 2–3 minutes until the surface turns golden brown. Flip the fillets and cook for an additional 2 minutes. Remove the salmon from the skillet and set aside temporarily.
  3. Make the sauce: Lower the heat to medium and add minced garlic and red pepper flakes to the same skillet. Sauté for about 30 seconds until fragrant. Pour in the chicken or vegetable broth, stirring to deglaze the pan and scrape up any browned bits from the bottom. Add heavy cream, chopped sun-dried tomatoes, grated Parmesan cheese, and Italian seasoning. Stir well and let it simmer for 2–3 minutes until slightly thickened.
  4. Bake salmon with sauce: Return the seared salmon fillets to the skillet, spooning the creamy sauce over them evenly. Transfer the skillet to the preheated oven and bake for 8–10 minutes, until the salmon is cooked through and flakes easily with a fork.
