Description

A light and refreshing Mixed Berry Trifle, combining layers of fresh berries, fluffy sponge cake, and sweet whipped cream. Perfect for a quick dessert that beautifully showcases summer fruits with a hint of vanilla and lemon.

Ingredients

Scale

Fruits

  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Cake

  • 1 cup sponge cake (store-bought or homemade)

Dairy & Sweeteners

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1 teaspoon vanilla extract

Additional Flavoring

  • 1 tablespoon lemon juice

Instructions

  1. Whip the cream: In a mixing bowl, combine the heavy cream, powdered sugar, and vanilla extract. Whip using a hand or stand mixer until soft peaks form, indicating the cream is light and fluffy but not over-whipped.
  2. Prepare the berries: Rinse all the mixed berries under cold water, then gently pat them dry. Slice larger strawberries into bite-sized pieces for even layering and ease of eating.
  3. Make berry syrup (optional): For an enhanced flavor, place a portion of berries with lemon juice and a little sugar in a saucepan. Cook over medium heat until the berries break down and form a syrup, then allow it to cool.
  4. Assemble the trifle: In a trifle dish or individual serving cups, begin layering by placing pieces of sponge cake at the bottom. Add a layer of whipped cream, then a layer of fresh or cooked berry syrup and berries. Repeat these layers until the dish is filled, finishing with a layer of whipped cream.
  5. Garnish and serve: Top the trifle with a dollop of whipped cream and whole fresh berries for a beautiful presentation. Serve immediately or chill in the refrigerator for up to 2 hours before serving for enhanced flavors.

Notes

  • You can use store-bought sponge cake or homemade for more freshness.
  • Whip cream to soft peaks to avoid over-whipping and turning it into butter.
  • The berry syrup is optional but adds a lovely depth of flavor and moisture to the dessert.
  • This dessert can be prepared a few hours ahead and stored in the fridge to meld flavors.
  • For a lighter version, substitute whipped cream with Greek yogurt or mascarpone cheese.
