- 3 cups (270g) rolled or quick oats
Instructions
- Prepare the mixture: In a medium saucepan over medium heat, combine the butter, granulated sugar, whole milk, and unsweetened cocoa powder. Stir frequently until all ingredients are fully melted and combined into a smooth mixture.
- Boil: Bring the mixture to a rolling boil and allow it to boil for exactly 60 seconds, stirring occasionally to prevent burning or sticking, ensuring the sugar dissolves completely.
- Remove from heat: Take the saucepan off the heat and immediately stir in the creamy peanut butter and vanilla extract until the mixture is smooth and homogenous.
- Add oats: Stir in the rolled or quick oats thoroughly until every oat is fully coated with the chocolate-peanut butter mixture, ensuring even distribution.
- Form cookies: Using a spoon, drop spoonfuls of the mixture onto a sheet of parchment paper. Allow the cookies to cool completely at room temperature; they will firm up as they set, resulting in chewy, no-bake cookies.
